the pancake speedbump

In the Telschow big house about one quarter of the downstairs floorspace is devoted to kitchen.  In the middle of this kitchen often lays one big furry black speed bump.

She lays like this.  One big pancake pup.

And when she is disturbed she looks like this.
That look says, "huh, what."

Speaking of pancakes:
I made these last Friday night.

After the big game (last home game of the regular season) Rachel and Whitney came back to our house.  Following some hot cider there was definite need for pancakes.  So we made buckwheat pancakes, made sans egg or dairy so Whit and I could enjoy them.  I used the recipe on yumuniverse.com but modified it (and also, naturally, doubled it).

Grind 2 Tablespoons of flax seed in the blender and then add 1/2 c of raw cashews.  Dump those into a bowl and add 2 c buckwheat flour, 1/2 tsp baking soda, 1 tsp baking powder, 1/4 sea salt, 1/2 tsp cinnamon.  Mix it up.

In the blender grind up 3 cups of water, 2 tsp vanilla, 1/4 c honey, and 1 1/2 bananas (mine are frozen). ***Tip with the honey measuring: swab some olive oil in the measuring cup first and you will be super happy.

Mix the two together.  Grease your skillet real good and make the pancakes palm-sized.

I like them in a stack with peanut butter between each layer.  Being out of maple syrup, we whipped up some cherry syrup to pour on top.
